- 2 Tbsp. vegetable oil, divided
- 1 1/2 lbs. boneless, skinless chicken breasts
- 5 plum tomatoes, divided
- 1 Tbsp. dried oregano leaves
- 2 tsp. paprika
- 1 tsp. ground cumin
- 1 large green bell pepper
- 1 medium onion
- 1 Tbsp. chopped garlic
- 4 cups water
- 1 Knorr® Chicken Bouillon Cubes
- 1 cup
- 1/4 cup chopped fresh cilantro leaves
Directions
Print1. Heat oil in 12-inch nonstick skillet over medium-high heat. Cut chicken into thin slices and dice 3 of the tomatoes. Add chicken and tomatoes to skillet and cook 2 minutes.
2. Stir in oregano, paprika and cumin and cook 2 minutes or until chicken is thoroughly cooked. Remove from skillet and set aside. While chicken is cooking, dice pepper and onion and remaining 2 plum tomatoes.
3. Heat remaining oil in same skillet and cook diced pepper and onion with chopped garlic until onions are soft, about 3 minutes.
4. Add water and Knorr® Chicken flavor Bouillon Cube to skillet and bring to a boil. Whisk in cornmeal until smooth. Reduce heat and cook 3 minutes. Stir in reserved chicken and tomatoes; sprinkle with cilantro.
